Sodexho executive chef takes Iron title

The rules are simple: make the most delicious, aromatic and beautiful meals possible with use of a full kitchen in one hour. But there’s a catch. You must use the secret ingredient, which in this case was ahi tuna.
After an hour of furious cooking, executive chef Jess Dozier and Alan Jacob, assistant director of student housing, were declared the winners of the Iron Chef competition hosted at Gonzaga University on Wednesday, March 19.
In front of 800 students in the dining hall, the two teams, one from Gonzaga and the other from Whitworth, battled to win over the judges with their creations. The competition was close enough the judges were forced to vote in the final tiebreaker. Whitworth won two to one.
The winning menu consisted of four courses: black tea miso soup with pan seared ahi tuna, peach bisque with tuna biscotti and a main dish of pan-seared tuna with a wasabi crust, partnered with ginger carrot puree and a winter vegetable hash. Dessert was chocolate mouse topped with shavings of ahi tuna and berries.
While the event was a serious one, Dozier said it was also held for the entertainment value, giving the students a break from the routine of the normal day to day dining experience. And Dozier said he didn’t mind beating Gonzaga in their own kitchen.
"They wanted to win. They expected to win," Dozier said. "We like to hold up Whitworth’s name whenever we can."
While he said Gonzaga’s food was more aesthetically pleasing, he said the judges attributed their ultimate win to distinct taste.
"I think we won on flavor," Dozier said. "When it comes down to it, it matters more what it tastes like than what it looks like."
Jacob, in charge of the peach bisque - a smoothie-like palate cleanser - agreed.

    See guy123’s comment.It is in the Virginia-Highlands. Everyone’s white because it is a very expensive neighborhood. It is still in the city limits, though, and only about 4 blocks from a pretty sketchy neighborhood (near Ponce).
